- Preheat the oven to 180 °C.
- Cut the bell pepper into small cubes, the sun-dried tomato into strips and the spring onion into rings.
- Mix the bell bell pepper, sun-dried tomato and 2/3 of the spring onion together with the remaining ingredients.
- Pour the PLANT B Egg mixture into the muffin tins and place in the oven. Bake for 45 minutes until done.
- Garnish with black pepper and the spring onion.
